DFG-100 Single Premium Gas Convection Oven – Natural Gas, 55,000 total BTU. Standard features include an Artisan Touchscreen Control with meat probe that allows for Manual Cooking, Recipe Cooking, Cook and Hold, Core Probe Cooking, Fan Delay, and Fan Pulse. It has 25" (635mm) adjustable stainless steel legs for single units and 6" (152mm) adjustable stainless steel legs for double sections, along with a draft diverter or draft hood for venting. The oven comes with a three-year parts and two-year labor warranty and a five-year limited oven door warranty. Construction consists of a stainless steel front, top, and sides with dual pane thermal glass windows sealed in stainless steel door frames. It features an ergonomically friendly curved aluminum door handle with simultaneous door operation, a triple-mounted pressure lock door design with turnbuckle assembly, a modular slide-out front control panel for easy cleaning, solid mineral fiber insulation at the top, back, sides and bottom, and a full angle-iron frame. The interior includes an easy-to-clean Oleophobic baking compartment liner (14 gauge), an aluminized steel combustion chamber, a dual inlet blower wheel, and five chrome-plated racks with eleven rack positions with a minimum of 1-5/8" (41mm) spacing. Operation uses a Dual Flow Gas system that combines direct and indirect heat, electronic spark ignition control, removable dual tube burners, a pressure regulator, a manual gas service cut-off switch located on the front of the control panel, and air mixers with adjustable air shutters. It includes a solid-state thermostat with a temperature control range of 200°F (93°C) to 500°F (260°C), a two-speed fan motor, a 3/4 horsepower blower motor with automatic thermal overload protection, a control area cooling fan, and interior oven lights. Capacity per section with 3.25" pan spacing is (5) full size sheet pans in left to right positions or (10) 12" x 20" x 2-1/2" steam table pans.
