HV-100E Single Electric Hydrovection Oven – 208V, 3PH. Built with the same fully welded angle iron frame, this single oven features a Low E glass door with a larger viewing area and cool-touch properties, a triple mounted door design with turnbuckle assembly, 304 stainless steel coved corner liner, a hand shower for cleaning, and two halogen interior lights. It offers multiple electrical configurations and programmable controls for hot air, humidity, and cool down, storing up to 100 recipes. The optional SmartTouch2 7-inch touchscreen allows for 500 recipes, rack timing, multi-shelf programming, and HAACP storage. Additional features include incremental humidity control, Hydroburst humidity injection, core probe cook and hold, USB connectivity, four-speed auto-reversing fan motor, and cavity vent control. Factory-paid startup is included. Capacity is (5) full-size sheet pans in left-to-right positions or (10) 12" x 20" x 2-1/2" steam table pans.
